I'm not sure what happened with this marriage, but by 1863, Elizabeth remarried - to James Devine.

She and James had two children, Edwin James Devine (Born 6th April 1859 at Seasalter, Whitstable) and Elizabeth Mary Devine (Born 8th July 1862 at Whitstable) born and named as Devine before James and Elizabeth married.

I know that George William Collingwood was at sea in 1861 (7th April census). Did he die by 1863, allowing James and Elizabeth to marry, was he transported or did they even divorce (very rare in 19th century England) or was this a case of bigamy? 

I suspect that George might have died or been sentenced to transportation. I can't find the evidence to prove either.
